Easy Energy Bars (raw, vegan and gluten-free)

I love snacks. What I don't like is paying $3 for some super processed bar that says it's GMO free but it's parent company paid $1,135,300 to ban Prop 37 from passing. (*cough* Lara Bar *cough*) Which is why I started making my own. I know 100% what goes in it and where my ingredients came from. I usually make a batch of these at the beginning of  the week to keep around as a grab and go snack.

Almonds are the mainstay nut in this recipe. They're super filling, jam packed with quality protein, fiber, and omega 3 and 6. They also have tons of antioxidants which help maintain the integrity and health of your cells. The vitamin E in almonds can help nourish your skin and protect it from the sun's damaging UV rays. You can use any kind of dried berries but I love using cherries. Cherries are packed with unique anthocyanins and other compounds that naturally mediate the inflammatory process. Basically, they're like nature's Advil. Perfect to help with muscle soreness from working out. 

Quick And Easy Energy Bars

  • one cup of raw almonds
  • 1/2 cup of dried cherries
  • 1/2 cup of dried blueberries
  • 1/2 cup of pitted dates
  • 1/4 teaspoon cinnamon

First, blend the almonds in your food processor until they become small crumbs. 

Then add the cherries, blueberries, dates and cinnamon and blend until it becomes almost paste-like.

 From here you can either flatten the dough on a cookie tray lined with wax paper. Place in the freezer for at least 30 minutes.  

Take out of the freezer and cut into whatever size bars you want. Wrap them individually and store in the fridge. *Option* Feel free to add in some shredded coconut, goji berries, or whatever else you sounds delicious. You can also shape the dough into balls instead of bars. Get wild.
