The Best Non Dairy Milk EVER!
So lately I've been experimenting with different seed and nut milks. Making your own non dairy milk is so easy and cheap. It just tastes so much better and you don't have to worry about what is in it (like careggean). Since you make it yourself, you know exactly what's in it. I always have nuts or seeds soaking to whip up some every other day. And while usually they are all pretty good, this one is AMAMZING. So smooth, silky and creamy. I love it.
So what is it? Pepitas aka pumpkin seeds.
I feel like pepitas don't get enough credit. They are a great source of magnesium, zinc, and omega-3s. They also contain tryptophan which the body uses to turn into serotonin (which makes you happy) and then into melatonin (which helps you fall asleep). They are also extremely anti inflammatory.
I've been using this in chia seed puddings and overnight oats. The taste and texture is unreal.
Activated Pepita Seed Milk
- 1 cup organic raw shelled pepitas soaked for 3-8 hours*
- 3 cups cold filtered water
- 2 dates
- pinch of salt
- 1 teaspoon vanilla extract
Drain and rinse the pepitas. Combine with all the other ingredients in a high speed blender for 1-2 minutes on high. Strain mixture in a nut bag. You can save the pulp to make energy bars or other raw treats. Will last three days in the fridge.
*I always soak my nuts and seeds before consuming them. Soaking increases the bioavailability of important nutrients (especially B vitamins) and activates helpful enzymes that increase nutrient absorption.
