Almond Butter Fat Balls
I've got another Fat Ball recipe for you. Ever since I made fat balls from Lee From America's blog I've been hooked on making different variations of them. Plus with going vegan keto I've been making more of them to satisfy my sweet tooth in a healthy keto-friendly way.
These bad boys are gluten free, paleo, low carb, sugar free, vegan, keto....basically everyone is going to love them. And if they don't, you need to evaluate your relationship with them. Just saying...... Anyways they're perfect to grab and go before/after a workout, as a snack, when you need something sweet. The healthy fat from the coconut butter and almond butter is so good for you and is super satiating. The cacao nibs provide a nice crunch to the otherwise smooth texture. I think my favorite thing about these is that they taste like desert but are healthy AF.
ALMOND BUTTER FAT BALLS
- 1 1/2 cups cashews (or almonds )
- 1/2 cup shredded coconut
- 1/3 cup coconut butter
- 1/4 cup almond butter
- 2 tablespoons chia seeds
- 2 tablespoons flax meal
- 2 tablespoons hemp seeds
- 6-8 drops of stevia (more or less or none depending on your taste)
- 2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- pinch of salt
- splash of coconut milk (or whatever non dairy milk you have around)
- 2 tablespoons cacao nibs
Put all the ingredients in your food processor and blend for a few minutes. If mixture looks kinda dry, splash some more coconut milk in. (Be careful to not overdo it) After the mixture looks pretty solid, sprinkle in the cacao nibs. Use a spoon or an ice-cream scooper to make equal size balls and roll them out in your hand before placing them on a plate and putting them in the fridge for a few hours to chill and firm up. Store them in the fridge until ready to eat.
