PUMPKIN SPICE PROTEIN WAFFLES (GLUTEN FREE)
Well, it’s finally here. Pumpkin Spice everything season. You can’t hide from it, so why fight it? I love making waffles any chance I get so I couldn’t resist making some pumpkin spice protein waffles. In addition to using pumpkin spice, I added real pumpkin to make them fluffy and a nice gold color (thanks beta carotene). Pumpkins are full of vitamin A, antioxidants, vitamin c, iron and folate: perfect to help keep your immune system healthy and your skin lookin nice.
PUMPKIN SPICE PROTEIN WAFFLES
1/4 cup protein powder (I use the Vanilla Vega Protein)
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cup almond milk
1 tablespoon coconut oil
1 tablespoon maple syrup
1 teaspoon flax meal
4 tablespoons pumpkin puree
2 teaspoons pumpkin spice
Preheat your waffle iron according to manufacturer's instructions.
In a mixing bowl, combine the dry ingredients, then add in the almond milk, pumpkin and oil. Mix until combined, but don't over mix. If you work the batter too much the waffles won't be fluffy.
Let the batter sit for 10 minutes.
Spray the iron with some spray coconut oil (I love Trader Joe's spray coconut oil) and pour the batter on the iron. Cook until the edges are crispy, usually around 5-7 minutes.
Plate them up with some maple syrup, sliced bananas, peanut better, or whatever you want.
These are great because they taste almost like a dessert but are actually healthy.
