one bowl vegan gluten free chocolate chip banana bread

I love banana bread. It’s one of my favorite gluten free breads to make because the banana keeps the bread nice and moist and fluffy. It is also a super easy bread to make since you don’t have to let the bread rise or proof the yeast or any of that funny business.

Pro tip for making banana bread: The riper the bananas, the better. I had to beg Chris not to throw out the bananas because he was convinced they where rotting and attracting fruit flies bu tI knew they were PERFECT.

Now this is a super basic recipe - feel free to add in some walnuts, pecans, coconut flakes, extra spices, whatever your little heart desires.

I also love making one bowl recipes. It just keeps things easy and it’s less mess to clean up.



simple gluten free banana bread recipe
  • 3-4 (depending on size) Super ripe bananas

  • 1/3 cup melted coconut oil

  • 2 teaspoons vanilla extract

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • pinch of salt

  • 1 3/4 gluten free flour (I use Bob’s Red Mill)

  • 1/3 cup sugar (I used pure cane sugar)

  • 1/4 cup almond milk (only use this if the dough is too thick)

  • 1/2 cup vegan chocolate chips

Preheat the oven to 350 degrees.

In a mixing bowl mash the bananas. I don’t mash them completely smooth because I like some banana chunks in my bread, so mash them to your desired consistency.

Add in the coconut oil, vanilla, salt, baking powder, baking soda and sugar and mix.

Add in remaining ingredients and mix (but don’t over mix)

Pour into a greased loaf pan.

Bake for 50-55 minutes.

Let cool before slicing.

This bread is especially delicious toasted with some almond butter drizzle on top or just by itself as a quick snack when you are on the go.
