CAKE BATTER ENERGY BALLS (VEGAN / GLUTEN FREE / REFINED SUGAR FREE)

The other day I grabbed a pre made smoothie from a company that I really like. The flavor was Cake Batter and I was soooo excited. I love cake batter: I have the best memories of my mom baking cakes and letting me and my sister lick the spoon and clean the bowl. (Thank god we never got samonella) It’s been a year since I’ve baked a cake (I had an EPIC cake fail last 4th of July) and I’ve been craving cake batter. (Side note: was anyone else obsessed with the gu birthday cake flavor? These balls remind me of them)

Anyways, the smoothie was kinda bleh but I got the idea to make energy balls that taste like cake batter but healthier. After some searching on the good old internet I found this recipe but made some switches to cut out the added sugar and add some more protein. These are good pre/post workout or just to grab when I’m feeling munchie. This is definitely a recipe that sounds like it’s junk food but is actually healthy. I wanted them to be refined sugar free because as my training picks up I like to cut out refined sugar. 

INGREDIENTS 

  • 2 teaspoons vanilla extract

  • 4 tablespoons unsalted creamy cashew butter

  • pinch of salt

  • 3-4 dates soaked for an hour in hot water (it softens them up and makes them easier to blend

  • 2/3 cup oat flour (you can make your own by putting the oats in a food processor on high until they are a flour)

  • 1/3 cup vanilla protein (I used Vega vanilla protein)

  • 1 teaspoon almond extract

  • 1 tablespoon unsweetened non dairy milk of choice (you may need more depending on the consistency of the dough)

  • Sprinkles (preferably organic)


TO MAKE:

In the food processor combine everything but the sprinkles. Blend until it forms a dough. Sprinkle the sprinkles over the dough but don’t combine them with the food processor. Take a spoonful of the dough and roll it into a ball to your desired size. Repeat with the rest of the dough. Keep the balls in the fridge until you are ready to eat them.
